In #1787 we tried doing a beta release, but we had to manually change some values due to some Apple tooling not liking the -beta.<build> suffix.

We need to have a clear set of instructions for how to perform a pre-release; ideally with as little manual changes required as possible. We also need to make sure that we provide instructions for how to turn main from a pre-release back to a normal release.
