What this PR does / why we need it:
This PR renames plugin docs directories:
fluentbit/(clusterfilter|parser|input|output) --> filter/parser/input/output
fluentd/globalinput --> input
Also contains regenerated docs (and documentation for missing plugins) alongside some minor improvements to FluentBit docs, particularly formatting and links to full FluentBit plugin references.
